It is no secret that I make bread every two/three days but what you can not know is that a few days ago I decided to have a go at one of my favourite bites: pizza.⠀
⠀
It was actually pretty good (in my non Italian and non expert opinion) and so I decided to share the recipe.⠀
⠀
Ingredients:⠀
⠀
250gr bread flour⠀
175ml room temp. water⠀
5gr salt⠀
5gr dry yeast⠀
1 tin chopped tomatoes⠀
3 garlic cloves⠀
two spoons of olive oil⠀
1 mozzarella ball sliced⠀
1 portabello mushroom sliced⠀
4 rashers of pancetta ⠀
⠀
Process:⠀
⠀
mix flour, water, yeast & salt⠀
⠀
when you form a dough, cover with wet cloth & leave to rest for one hour ⠀
⠀
mix again ( i lift it from the bowl with my hand open, and flip it back to the bowl for 5 minutes)⠀
⠀
let it rest for one hour (covered)⠀
⠀
after 30 mins, preheat oven pizza stone (gas mark 7) ⠀
⠀
make the tomato sauce (fry garlic, add tomato & cook until most liquid evaporates) let it cool.⠀
⠀
separate the dough in two and stretch to a pizza shape. (make a ball, flatten to a circle and with your 4 fingers extend from the middle to the outside.)⠀
⠀
top with tomato, mozzarella, mushroom slices & bacon.⠀
⠀
cook 18 minutes at gas mark 8⠀
