Many many years ago, before gentrification started to become a global issue which displaced communities and ,too often, resulted in ghost streets, the world was full of family owned local joints without other expectation than keeping their locals happy.⠀

One heard of restaurants going out of fashion in cities like New York and wondered what that could have been about .⠀

Unfortunately, as the rents went up chains and conglomerates moved in and the number of independent businesses dropped. (Across the world)⠀

To make matters worst, nowadays the virtual social media moves crowds across the world and people involved in the food industry are having to spend an unnecessary amount of time thinking about how their food will look on Instagram in order to attract customers.⠀

This is why wherever I am, I follow the locals and go to places which continue to live as though being social meant meeting a group of friends over a great meal.

Places like this one by my parents' where the deco is truly minimal and the flavour is the focus. ⠀

This was the first time I tried their jamón asado and it left me speechless (I appreciate some of you don't eat pork, and hence you might need to trust me when I say this was cooked by a very skilled cook ) ⠀
