The challenge however, specially when you want to buy more than one, is the cost. ⠀

To give you a sense of the scale...for half the cost of one medium/large bun at the bakery, I made 10 medium at home.⠀

I will not claim that my skill is comparable with the professional baker...ever.... Furthermore, I realise the land value in London is out of control and rents are escalating.⠀

However, mine were rather lovely and easy enough to make and enjoy for a few days .⠀

Ingredients bun:⠀
⠀
200gr plain flour (not bread flour)⠀
120ml room temp. water⠀
25gr sugar⠀
3gr dry yeast⠀
28gr soft butter⠀
⠀
Ingredients filling:⠀
⠀
20gr butter⠀
30gr sugar⠀
1/2 teaspoon cinnamon⠀
⠀
Rough instructions:⠀
⠀
mix the flour, sugar, yeast and water.⠀
add soft butter.⠀
work it on the table for 5 minutes.⠀
Leave it to rest (covered) for 1 hour⠀
mix the sugar, cinnamon and butter ⠀
flatten dough with roller in a rectangular shape.⠀
spread the cinnamon mix on it⠀
fold 1/3 in⠀
complete the fold⠀
roll and make a rectangle⠀
cut in 12 stripes with pizza cutter⠀
twist each piece on itself⠀
roll each piece tucking end under the bun⠀
Place on an oven tray over a greaseproof paper ⠀
leave 1 hour to rest covered ⠀
preheat oven 180 degree Celsius⠀
brush egg yolk on all buns⠀
sprinkle sugar⠀
bake for 15 minutes⠀
flip and bake for 5/8 minutes⠀

(The first time I baked for 5 extra minutes and they were lovely but dried a bit after day 3. Hence I reduced the time slightly. My oven is gas. Yours might be different...keep an eye)⠀
